Solok Lada Pantai Timur ( Stuffed Yellow Chili )
One of the main side dishes to the Kelantan Nasi Kerabu is Stuffed Yellow Chilis . Fresh fish meat along with freshly grated coconut are stuffed into the chili as filling . It is steamed and served with other delicacies .
The ingredients :
- 1/2 kg fresh sardines - scrap meat out
- 1/4 kg freshly grated young coconut flesh
- 1/2 inches young ginger root
- 5 shallot
- 4 tablespoons coconut milk
- 1 egg lightly beaten
- salt to taste
- 5 -10 big yellow chilies - make a middle dissect and discard the seeds . Wash and leave it aside .
To make the filling :
- In a pestle / mortar mix the fish meat , the grated coconut , ginger root and shallots . Pound until fine .
- Add in the coconut milk and beaten egg. Mix the ingredients and leave it to set . Stuff the filling into the chili through the dissect part and steam until done ( 15 -20 minutes ).
