 Roti Jala (   Malaysia Lacy Pancake or the Fishnet Pancake  )

The name ' Lacy  ' or Roti Jala ( Malay ) came from its  design or pattern , created through the special pancake cup .The right consistency of  batter is essential  to fennel it through the 5 small hoses or tubes in the cup . The filled cup ( with batter ) is moved in circular motion over a flat pan thus creating the pattern for the pancake . Once done , the pancake is rolled or folded into a triangular or cylinderical form .  The pancake is loved for its smooth and delicate texture .  


To make the pancake , you need :

  • 2 cups of flour
  • 2 cups of water 
  • 2/3 cup of coconut milk
  • 1 egg
  • 1 tspoon of turmeric powder - as colorant
  • 1/2 tspoon of salt
Sift  flour into a bowl . Mix in salt and coconut milk . Stir . Break the egg in water . Stir to combine . Using a whisk , stir the egg mixture and pour  into the flour . Whisk the mixture until it turn into a smooth batter . Strained batter  for unwanted  lumps . Grease a flat iron pan or use a non-stick pan . Put a ladle of batter into the cup ( Fill up to at least half a cup ) then , move the cup in a circular motion to make the lacy pattern . Make sure that the cup is at few inches high from the pan when you make the motion  ( one /two inches ). If it is too high , the batter will turn to drops and spoil the pancake . Cook until set . The pancake is set once you notice the edges begin to curl up . Using a flat spatula , lift the done pancake onto a plate . Leave it to cool before you roll it . Continue frying until finish .
