Rendang Pedas , Perak ( Fresh Prawns in Spicy Reduced Dish )
This is another different type of Rendang . It has red colored gravy with fresh grated coconut . Like other Rendang dishes , the spicy gravy is cooked to reduction . The Rendang is usually showcased during festive occasions . It is eaten with Lemang .
The ingredients :
- 1 kg of fresh coconut milk
- A bowl of freshly grated coconut - from half a coconut
- 1 kg of big / medium size prawns - clean and slid the back of the shell to remove the intestinal vein.
- 100 grams shallots or big onions - sliced
- 2 inches of ginger - thinly sliced
- 2 -3 stalks of lemongrass - bruised
- 1 small bowl of dried chili paste
- 2 -3 pieces of turmeric leaves sliced
- Salt to taste
How to do :
Heat the pan. Pour in the coconut milk and combine the grated coconut, sliced onions, ginger, chili paste, lemon grass , the turmeric leaves with salt and palm sugar . Bring it to boil over a slow heat. Stir the mixture and let it simmer until the coconut milk thicken. Continue stirring and simmer until oil appear . By now the simmered mixture has turned into deep red colored paste. When this occurs, add in the prawns and enough salt to taste. Stir . Off the heat . Leave it aside to settle . Serve with Lemang or Nasi Minyak .
