 Fried Red Tilapia in Spicy Chili Paste

Perak is synonymous with its fresh water breed . The fresh water fishes are known for its nutritional value . Wild Tilapia is believed to contain high in Omega 6 and Omega 3 , the balanced that is required in normal diet ( Only wild Tilapia ) . The wild Tilapia  breeds in shallow waters such as lakes and streams , which geographically  covered  most  of the Perak landscapes . There are few versions of Tilapia , the Red and black - which are fish farm  breed and the charcoal or slightly silver in color ( wild ).  The fish is delicious to  grill, fry , steam or cook in spicy coconut  milk gravy. 



The ingredients


500 gm  of Red Tilapia  -  scale , clean and fried 


The spicy sauce

  • 2 big yellow onions  - Slice
  • 5 long beans - cut into an inch length
  • 2 / 1 lemongrass - bruised
  • 1 small bowl of mix 10 bird eye chilis & 5 red chili - make into paste
  • A small bowl of tamarind juice
  • A t/spoon of toasted prawn paste
  • Enough oil to fry
  • Salt and palm sugar to taste
Method
  1. Heat oil in a pan . Fried the bruised lemongrass until fragrant and add in the sliced onions .
  2. Leave the onions to soft . 
  3. Add in the chili and the  prawn paste . Stir . Sauteed until the chili paste cook . ( The color change to slightly darker and reduced ) .
  4. Once the paste is cooked , add in the tamarind juice together with the long beans . Stir regularly until the mixture combined .
  5. Add in enough salt and sugar . Leave it simmer for a while .
  6. Off  the heat . The lovely sauce is ready once the paste is thicker and  oil starts forming . 
  7. Make sure the beans are not overcook . It is best to serve it slightly crunchy .
  8. Pour the sauce on top of the fried fish. Serve with hot steamed rice .
