Gulai Asam Tempoyak Ikan Patin Pahang
( Fresh Ikan Patin with Fermented Durian )
A very delightful Pahang tradisional dish. The fresh fermented durian paste boiled in tamarind juice or dried Asam Gelugor made a soury soup base that compliment the fresh fish meat. The fish which is wildly bred in the Pahang River, has delicate meat and contained high nutrirional value. Generally, it is slimy, no scales and light silverish in color.It can grow to 1 meter in lenght and weight up to 20 kg.
The ingredients
- 1 ikan patin ( 500 gm ) - clean and wash with the tamrind pulp to discard the unpleasant smell .
Ground
- 10 shallots
- 1 inch of fresh turmeric root
- 10 bird eye chilies
- 3 tablespoon of fresh fermented durian paste
- 3 pieces of the Asam Keping or 1 cup of fresh tamarind juice
- a cup of water
- salt and palm sugar
- a piece of fresh turmeric leave
- 2 stalks of bruised lemon grass.
