Negeri Sembilan Darul Khusus
The traditional foods of Negeri Sembilan are known to be very creamy and hot. The cuisines are mostly influenced by the Minangkabau clan of Sumatra. Spices and herbs like candlenut, galagal, lemongrass, cili padi, fresh tumeric, Kaffir leaves, Salam leaves are commonly used in their authenthic cooking.
In some of its original dishes
onions are rarely used. This has been the style and practice
by the original natives of the state – the orang asli , long before the
‘invasion’ of the Minangkabaus.
It was only after the settlement of the
Minangkabau’s Sultanate, a different style of cooking was
introduced. The Negeri Sembilan cooking involves a lot of
cili padi or the bird’s eye chilis. Besides the hot and creamy
dishes, some are fried and topped with fresh red chili sambal or paste.
The dishes are accompanied with sambal tempoyak as side
condiments taken with fresh ulam or local salad.
