A Simple Fish Curry Dish
'A Simple Fish Curry Dish' is a demonstration of a mild Curry using only basic curry ingredients. Curry leaves are vital as they developed the natural curry flavor while turmeric and chili paste colored its broth. Along with few other spices ( whole ) , vegetables are added making it a healthy balanced diet.
The ingredients
- 500 gm fish - cleaned and cut to desired pieces
- You can use Red snapper ( Ikan Merah/Jenahak), Black pomfret ( Bawal Hitam), Mackerel (Ikan Tenggiri) or Barramundi / Sea bass ( Siakap)
Blend
- 10 shallots
- 5 cloves garlic
- An inch ginger
- An inch fresh turmeric
- 2-3 sprigs fresh curry leaves
Other ingredients
- 2 tsps fenugreek seeds
- 2 tsps mustard seeds
- 1 clove garlic - sliced
- 1 shallots - sliced
- 2 tbsps chili paste
- 1/2 cup coconut milk
- 1/2 cup fresh tamarind juice
- 1/2 - 1 cup water
- 2 tomatoes - halves
- 3-4 Ladies finger
- 1 fresh green chili - halves and discard the seeds
- 2 tbsps oil
- salt and palm sugar
How to do :
Heat oil in a pan ( kuali ). Stir fry the sliced ingredients with fenugreek and mustard seeds. Add the blended spices with chili paste.Stir. Leave it to simmer or until oil surface. Add the tamarind juice . Stir and let it simmer. Add in water, salt and palm sugar. Leave to boil. Once boiled, add the coconut milk. Gradually stir to avoid the milk from breaking. Add the fish and ladies fingers. Simmer over medium heat. Add tomatoes and sliced green chilies, once the gravy begin to boil. Taste and off the heat once the gravy done. Serve and top the curry dish with sliced coriander leaves or fresh mint leaves.
