Chicken Debal Curry
The curry is the Portugese - influenced traditional cuisine which is popularly known as hot curry . The dish is sour and spicy with generous use of tamarind as well as vinegar . Even it is less popular compared to most other dishes , it comparitively taste delicious .
The ingredients
- 1 1/2 kg chicken - cut into serving portion
- 1 tspn of salt
- 8 tablespoon of oil
Finely slice
- 6 shallot
- 3 cloves of garlic
- 3 red chilies
Ground ingredients
- 30 dried chilies - soak
- 5 red chilies
- 5 cm galangal
- 15 shallot
- 3 cloves of garlic
- 8 candlenuts
- 1 tablespoon of coriander
- 1 tspn of turmeric powder
- 1 tablespoon of mustard seeds - crush lightly
- 1 1/2 cup of water
Combine
- 11/2 tablespoon of rice vinegar
- 11/2 tablespoon of dark soy sauce
- 2 tspns mustard
- 1 tspn of salt
Method
Season chicken with salt and leave it aside . Heat oil in a pot or pan and lightly brown sliced ingredients . Put in ground ingredients and fry for 5 minutes and add in mustard seeds . Fry until fragrant . Add in the chicken , leave to fry for a few minutes . Then , add in water and bring it to boil . Cover and let it simmer over a low heat . Stirring occasionally until chicken is tender . Once tender , add the combined ingredients . Stir well and add in salt to taste . Leave it to simmer for a while to let the flavors mellow and develop for a few more minutes or until the gravy bubbled. Off the heat and serve .
