Kacang Phool ( Egyptian Foul Mudammas ) with Fried Egg
One of the rarely found recipes in Asia,'Kacang Phool' or Foul bean, a delicious National Egyptian( Middle Eastern ) breakfast meal served in certain coffee shops in Johore town. In the Egyptian way, the foul bean ( Fava bean) is stewed in tomato puree, pureed, mixed with olive oil and eaten with Pita bread. It is a healthy type of breakfast meal as the beans contained high in fibre and protein thus making it a hearty packed snack or even a full meal. This wealthy breakfast meal however is prepared differently here. Mix beans - chic peas, kidney beans are sometimes added to make the recipe. Combination of mixed spices, sauteed minced meat and herbs with the stewed beans creating it very aromatic. The prepared meal is topped with sunny side-up egg, sliced green chilies, celeries and halves calamansi and eaten with toasted bread.
The Ingredients:
- 1 big can foul beans - coarsely / finely mashed
- 1 small can chic beans - coarsely / finely mashed
- 1 small can kidney beans ( optional ) - coarsely / finely mashed
- 200 g minced meat - sauteed to brown
- 5-10 fresh tomatoes - chop and sautee to reduce juice
- 1 tbsp ghee
- 1 tbsp oil
- 1 pckt meat curry powder
- OR
- 1 tblsp biryani masala
Ground
- 2 large yellow onions
- 3 cloves garlic
- 2 cm ginger
- 1 tbsp cumin seeds
- 1/2 tbsp fennel seeds
- 10 dried chili - wash and soak
For Garnishing
- Few eggs - fried to sunny side - up
- 2 large red onions - diced
- 4 long green chilies - thickly sliced
- Few sprigs of spring onions and celeries - sliced
- Calamansi - halves
