Ikan Patin Lemak Tempoyak  ( Silvery Cat Fish in Fermented Durian Gravy ) 

 " Lauk Lemak Cili Padi " is synonym to the Perak state . The word " Lemak " refers to the thick creamy coconut milk used as gravy . Any fresh water fishes is suitable to cook in this spicy creamy sauce style . Simple as it is, the dish, containing different ingredients and herbs develop its very own taste . In this dish , the fermented durian is added to determine its flavor . Ikan Patin or the Silvery Cat Fish is known for its delicate and savory meat . This fresh water breed has less bones and taste delicious . Thus suitable for anyone to try . 



 Ingredients

  • 1/2 kg   ikan patin  - cut to serving portion

Ground 

  • 6 shallots  
  • 1 inch fresh turmeric root 
  • 10 birds eye chilies

  • 1 lemon grass - bruised
  • 1 turmeric leaf - halves and tie to a knot
  • 1 cup of fresh coconut milk 
  • 1 cup of water
  • 3 tblspoons fermented durian flesh          (tempoyak)
  • Salt

 Method


In a pot , combine the above ingredients . Simmer over low heat . Stirring continuously to avoid the milk from breaking . Once the gravy starts boiling , add the fish and salt . Stirring gradually until the fish cook . Remove from the heat and serve with steamed rice .
