GARAM MASALA
' Masala - an Indian term which means mixture of spices cooked in oil . Garam Masala is the most popular version . It is used in preparing many Indian curry food recipes . The mixture is also used as food garnishes .
- 2 tblspns fenugreek seeds and fennel seeds
- 4 tblspns coriander seeds
- 1 tblspn cumin seeds
- 1 1/2 tspns black cumin seeds ( shah jeera )
- 1 tblspn black peppercorn
- 1 1/2 tspns dry ginger
- 3/4 tspn green cardamom pods
- 3/4 tspn black cardamom pods
- 3/4 tspn cloves
- 1 stick cinnamon
- 3/4 tspn crushed bay leaves
Method :
- In a pan toast all the above spices until they turn to shades of brown and fragrant .
- Remove the cardamom seeds from its skin and mix with the other toasted spices . Grind all the spices until fine ( smooth powdery textutre ).
- Keep in an air tight container in dark , cool place .
