The Curry Powder / Paste Recipes


Spicy Curry Powder / Paste 

Ingredients

  • 1/2 cup of coriander seeds       - wash and toast until light and crispy
  • 1/4 cup of cumin seeds            - wash and toast until light and crispy
  • 1 tablespoon of mustard seeds  - wash and lightly toast
  • 3/4 tspoon of fenugreek seeds  - wash and lightly toast
  • 1 tspn of black pepper
  • 5 strips of dried red chilies       - wash and toast until crispy
  • 2 tspn of turmeric powder 
  • 20 dried curry leaves
In a blender or pestle , grind the above until fine or powdered . Keep it in a clean , air tight container in cool dark place . 

 Basic Curry Powder


Ingredients

  • 10 dried chilies
  • 4 t/spoon of toasted coriander seeds
  • 2 t/spn of toasted cumin seeds
  • 1/2 t/spns of mustard seeds
  • 1 tspn of black peppercorn
  • 1 tspn of fenugreek seeds
  • 10 fresh curry leaves
  • ( Wash and toast the above ingredients until crispy  )
  • 1/2 t/spn of fresh grated ginger
  • 1 tablespoon of fresh ground turmeric
Using a blender or a coffee grinder blend all the above ingredients to paste . Keep in airtight container in refrigerator .
