Chili Fried Chicken 

This very hot and spicy dish is one of the best Malaccan cuisine. Rarely showcased, this beautiful stir fried curried flavour sauce wrapped either the deep fried chicken or Mackerel. Its aromatic taste came from the fresh curry leaves along with toasted fennel and cumin seeds. The spiciness are the combination of the black pepper and the chilli paste. A very pleasant dish to try for spicy cuisines lovers.

 

Ingredients

  • 1 whole chicken – cut into serving portion
  • Marinate the chicken with turmeric powder and salt. Deep fry till golden brown.

The sauce ingredients

Ground

  • 50 gm        dry chillies – seeded and soak in hot water to soften
  • 15              shallots
  • 7 cloves     garlic
  • 1/2 cm       galangal
  • 3-4             lemon grasses

Coarsely pounded

  • 2 tbsps        toasted fennel seeds
  • 1 tbsp          toasted cumin seeds
  • 1 tbsp          black pepper

  • 2 tbsps        oil
  • Salt and sugar to taste 

Method:

Heat oil in a pan. Stir fry the curry leaves until fragrant and add in the ground ingredients. Stir fry until oil surface. Add the spices and black pepper. Add salt and sugar. Add the chicken. Mix the fried chicken with the sauce. Off the heat and serve.
