 CHICKEN VINDALOO

The Vindaloo Chicken is another sample of the Portugese chicken dish . Originated from Kerala , it is made from a special Vindaloo Curry Powder with vinegar,( replacing tamarind ) and few other spices .The acidic taste of  the Vinegar  significantly compliment the pungent taste of the curry powder. This dish however required no curry leaves or coconut milk compared to Indian curries. 



The Ingredients

  • 1 kg chicken - cut into serving portions
  • 8 tablespoons of oil 

Ground

  • 15 shallots
  • 10 cloves of garlic
  • 2 1/2 cm ginger
  • 3 tablespoon of Vindaloo curry powder - mixed to paste with a little water
  • 1/2 cup of vinegar
  • 1 cup of water
  • salt to taste
Method

Heat oil in the pan . Fry the ground ingredients until fragrant . Then , add in the curry paste . Leave it to simmer until oil surfaced . Add vinegar a little at a time , while frying the ground ingredients . Put in the chicken and fry for a few more minutes over high heat . Add water and salt and simmer over low heat for another 15 minutes. Wait until the chicken is tender and gravy thick before you off the heat and served .
