Kuzi ( Chicken Kuzi )
A thick spiced gravy cooked with either chicken ,beef or mutton . It is a Kelantan style of curry which everyone yearns for . The dish is prepared as accompaniment to the special cooked rice - Nasi Minyak ( the Ghee Rice ) and bread . It is also beautiful to be taken with plain Biryani Rice.
The used of Saffron, the generous amount of shallots - fried or fresh, along with other herbs and spices make up its delicious taste. As preparing it is complicated , it is only sampled on special days or certain events such as Wedding banquets or formal ceremonials. This is a very lavish dish; a dish that is fit for a King.
The things you need :
- The siblings ; 4 cloves , 1 cinnamon stick, 2 star anise, 4 cardamom pods .
- 1 whole chicken - cut into serving portions
- 2 packets of Kuzi curry powder
- ½ kg or more of shallots – half blended while the other
half - washed, sliced and make to fried shallots
- ½ a bottle of Tomato sauce ( Del Monte brand preferred)
- ½
a small tin of tomato puree- same brand
To be blended:
- 4 big onions
- 6 cloves of garlic
- 1 half inches of ginger
Other ingredients :
- 1 tin of evoporated milk
- A few strips of safron strands
- A small bowl of fried raisins and
cashew nuts
- Enough salt to taste
How to do ?
- Marinate the
chicken with 3 tablespoons of the blended
ingredients, salt and pounded safron.
- The safron will
give yellow color to the chicken.
- Once marinated,
fried the chicken until ¾ cook ( three quarter ) and set the chicken aside.
- Reduce the oil to
just enough to sautee the 4 siblings , the blended ingredients and the
Kuzi curry powder.
- Sauteed until the spices begin to fragrant.
- Once frangrant, add in
a bowl of water. Stir . Leave it to simmer for another 5 minutes.
- Then, add in the tomato puree and the tomato sauce. Stir to combine.
- Let the
spices cook over a low heat and leave it to boil.
- Once boiled, add the milk and stir. Add in the chicken , salt and sugar .
- Stir. Cover the pot . Leave it to simmer over low to medium heat .
- Let the chicken cook until tender . Leave the gravy to boil .
- Once boiled , add in the smashed fried shallots . Give it a good stir.
- This will make the gravy thick and tastier . Leave it to simmer for another few minutes .
- Off the heat .
- Garnish it with roughly sliced corriander leaves , raisins and cashews .
