The Favorite Acar Rampai ( Mixed Pickles )
The mixed pickles , eaten as side dish along with curries , dalcas , Kurma served with Briyani rice or the classic Ghee Rice . There are few types of cooked mixed pickles . There are the curried ( chutney ), the vinegarate and the sweet and spicy type . The mixed pickles or chutney are mostly made from fresh crunchy vegetables, pickled fruits or the very sour type of fruits . The cooked pickles are stored in an airtight container or bottle. Kept in refrigetrator to last longer . The longer the pickles are kept , the better its taste .
For the Mixed Pickles , you need :
- 2 cucumber , seed portions discarded , cut into 1 1/2 x 1/4 in strips
- 1 large carrot , cut in same lenghtwise
- 10 shallots halved or whole if small
- 6 cloves of garlic ( whole or halved )
- 4 red chilies - seeded and cut into strips
- 4 green chilies - seeded and cut into strips
- 150 grams of ginger - shredded or cut into thin strips
- 1 teaspoon of turmeric power
- 1/2 tablespoon of salt
- 1/2 tablespoon of sugar
- 4 shallots - sliced
- 2 tablespoon of mustard seeds - washed and drained
- oil for stir-frying
- Combine
- 1/2 cup of vinegar
- 1/4 cup of water
- 11/2 tablespoon of sugar
- 1/4 tspoon of salt
- 1 tablespoon of sultanas
- Ground
- 20 dried chilies
- 1 inch turmeric root
